Beef stew with orange essence
  This beef stew relies on oranges to make a huge impact on the finish of the dish. It is surprisingly sweet and tangy all at the same time without being overwhelming. It has overtones of earthy oregano that's added at the last minute to finish and could easily be served over boiled potatoes, mashed plantains, rice and beans or egg noodles. Thickened with HOMECRAFT ™ Create 765 Wheat Flour at the beginning of the dish when the meat is browned, the sauce's finished quality is lustrous, velvety, very thick and rich.

Beef stew with orange essence
Preparation time: 20 minutes
Cooking time: 1 hour 37 minutes
Yield: 6 servings
 
Ingredients:  
HOMECRAFT ™ Create 765 Wheat Flour
1/4 cup
Salt
1 tsp
freshly ground pepper
to taste
beef stew meat cut in 2 inch pieces
2 lbs
peanut oil
2 TBL
diced onion
1 large
diced carrot
2
diced celery
2 stalks
cumin
2 tsp
ground coriander
1 tsp
tomato paste
2 TBL
2 large oranges zested, juiced, rinds reserved
2
beef broth
2 cans (14 oz)
dry red wine, like Cabernet Sauvignon, Barolo, or Syrah
2 cups
minced oregano
2 TBL
 
Method of Preparation:
Place HOMECRAFT ™ Create 765 Wheat Flour, salt and pepper in re-sealable plastic bag, close, shake to mix well. Add beef, close bag and shake again to coat beef evenly. Remove beef, shaking off excess flour mixture and place in a single layer on a plate, discard remaining flour mixture. Heat oil in large Dutch oven over medium high heat until very hot, about 2 minutes. Brown beef, in batches, turning once until evenly browned, about 10 minutes. Remove beef from pan, set aside. Add onions, carrots, celery, cumin, coriander, and tomato paste; cook, stirring frequently, until onions start to caramelize and tomato paste turns deep red, about 15 minutes. Stir in zest, juice, orange rinds, broth, wine, and beef. Bring to a boil, lower heat to a simmer, cover; cook until beef is fork tender, about 1 hour. Remove orange rinds from stew and discard. Remove meat from pot, puree cooking liquid with an immersion blender, return meat to pan. Stir in oregano, taste, adjust seasoning.
